    This is my newest favorite food. I've shared it with many folks and can not believe how quickly it is gone. Now I'll share with you!

    Remove papery skin from the outside of two bulbs of garlic and cut off the tops. Do not separate or peel. Brush each with 1/2 tsp of olive oil. Wrap each bulb in heavy foil. Line small pan with foil and add bulbs. Quarter 3 plum tomatoes and brush them with oil as well. Add to pan. Roast at 425 for 30 - 35 min. cool for 10 to 15 min.

    Squeeze garlic into bowl and mash up a bit - should be nice and soft. Stir in 8 oz of onion and chive soft cream cheese, 1/4 tsp Italian seasoning and 1/4 tsp salt. Chop up tomatoes, the skins will peel right off, and stir into mixture.

    I serve on bread toasts made by : slice up a skinny baguette of french or multigrain bread ( I prefer the multi) into 1/4" slices. Spread out on cookie sheets. Place in 250 oven for twenty min.

    Yummy! Put this out on a table and watch it disappear!

    Sounds so good. Only prob is DH doesn't eat cream cheese, so guess who would have to finish it off :)

    Sneaky huh? :) Ah well. he never knows his fav cake has sour cream in it :)
