Family favorites:
roasted Brussels sprouts served with garlic bacon aioli
asparagus, chopped into 1" chunks and quick-fried with bacon
wedge salads
spinach salad served with strawberries, chopped bacon, chopped egg, and balsamic vinegar.
My favorite "summer" dish is a slaw. I've NEVER liked standard cole slaw with mayo, but this one doesn't have mayo in it. I always get compliments and requests for the recipe when I take it to potlucks and bbqs. I mostly eyeball my ingredients, but here's a baseline recipe to get you started. Adjust to your own personal taste.
Asian Slaw
1/2 c vinegar
1/4 c sugar
1/2 c good quality sesame oil (you want one that actually tastes like sesame, because this flavor is key)
1 teaspoon celery seed
1 teaspoon dry mustard
S&P to taste
1 head of green cabbage
1 red onion
Shred or slice cabbage and onion. Mix the vinegar, sugar, oil, and spices well, pour over veggies, mix well, serve.
Ooo the sesame in that recipe reminded me of this one, which is another dish that disappears quickly.
Sesame Noodles
1 lb thin spaghetti noodles, cooked, drained, and cooled
1/4 c sesame oil
1/4 c rice vinegar
2 T sugar
1/2 c soy sauce
2 T freshly grated ginger root
2 teaspoons hot chili oil
1 bunch green onions, sliced diagonally
for garnish:
1/3 to 1/2 cup chopped cilantro
toasted sesame seeds
Mix all ingredients except noodles and garnishes together, then toss with spaghetti noodles. Let stand at room temperature, tossing occasionally, until all the sauce has been absorbed into the noodles. Add garnishes and serve.

Okay, Green salad, potato salad, macaroni salad, fruit salad, Italian green bean salad with heirloom orange-red ripe tomatoes and green beans parsley, spices and vinegar and oil. Make the night before for the best flavor meld.
Hubby makes most of the meat on the weekends. We love Mexican dishes like enchiladas, burritos. tacos, Fajitas. No we are not mexican, but summer is the best with that food.
Steamed veggies or even grilled veggies are good with meat. Even flavored rice dishes.
Check at the recipe sites, there has got to be a side dish section to peruse.

The biggest hit of the "sides" I make are simple roasted squash and baked sweet potatoes. Yep plain. I just quarter the squash (anykind), seed it, wrap in foil, and bake it at whatever the meat is roasting at. Same with the sweet potatoes Just wrap in foil. I have even just run my extra squash over to my neighbor who sticks a little butter on it and eats it as a snack.
