Slow-Cooker Turkey Chili
1 bag of red beans
1 pound of ground turkey
1 onion-diced
1 red bell pepper-cut into large chunks
1 green bell pepper-cut into large chunks
2 cloves of garlic-minced
1 4 oz can of diced green chilies
2 6 oz cans of tomato paste
1 can of diced tomatoes drained (I used a pint size jar of diced tomatoes from my garden last year)
4 tsp. chili powder
2 tsp. montreal steak seasoning
1 tsp. dried parsley
1/4 tsp. cumin
1/8 tsp. of paprika
1/8 tsp. of ground mustard
water
1. Rinse beans and place in slow cooker. Cover with water (about 3 inches from top of cooker) and turn on high. Cook for 3 1/2 hours.
2. Cook turkey meat on stove top. Drain; add to slow cooker. Add bell peppers, onion, green chilies, tomato paste, diced tomatoes, and garlic and seasonings.
Turn slow cooker on low. Cook for 4 hours. Or may keep on high for shorter cook time.
Water may be added as needed.
The longer the chili cooks the thicker it will become.
Adjust recipe as you desire. I don't measure everything completely, I just add till it tastes right. Hope you enjoy it.
