spaghetti con tre formaggi, or what I made for lunch

Just threw this together today, I was craving mac & cheese but no elbows in the house. This was better.
Cooked spaghetti for two
In large fry pan, saute two slices bacon, one onion chopped, and minced garlic to taste. Grate about 1/2 cup each of mozzarella, sharp cheddar, and American cheese ( this is what I had on hand). Take out cooked bacon and break into bits, add some olive oil to the fry pan, add back in the bacon and cooked spaghetti, and the cheeses. Stir over low heat until melted and mixed. Sprinkle with black pepper. Mangia bene!!

Shoot!! Wish I'd read this just 20 minutes earlier; I made a huge salad for myself with lots of antipasta things from the deli, and ate it before seeing this thread. :oops: :cry:
