    I've lived in California a long, long time and have never had a problem with bad cranberries. Perhaps it is the store keeping them too long.

    I love cranberries, and I also have to throw several away, when I buy a bag. I would love to have your cranberry bark recipe if you don't mind sharing. I make a delicious Cranberry salad for Thanksgiving and Christmas. I can't have much this year because I am taking Warfrain for a blood clot right now and cranberries and Warfrain do not go together.
    Here is my recipe if anyone wants it.
    2 bags or 2 qts of raw cranberries, 2 cups of water,4 cups of sugar, 2 pkgs of lemon jello,2 cups of chopped pecans, 2 cups of chopped apple, 2 cups of chopped celery, 2 Tablespoons of plain gelatin,4 tabls of cold water, 2 cups of water about 30 large marshmallows I prefer the small ones, they dissolve faster. (there is not a typo on the amount of water)
    Clean cranberries then in a large pot combine cranberries, sugar and 2 cups of water cook until the berries stop popping - stir often, remove from fire. Add lemon jello and dissolve the 2 tbls of plain gelatin in 4 tabls of cold water and add to the mixture immediately (the gelatin thickens quickly) stir well. Now add marshmallows to hot mixture and stir until marshmallows are dissolved. Add 2 cups of cold water stir and let cool. Add apple, nuts and celery, stir and pour mixture into a very large pyrex pan and refrigerate to congeal for several hours. This will serve at least 20-25 people. Enjoy.

    I love this quick snack - wash cranberries, beat a couple of egg whites until stiff, roll berries in egg whites then roll in granulated sugar- makes a great snack for kids and adults. My kids loved this when they were small.

    You ladies from Wisconsin ought to love this one...you have both cheese and cranberries!!!

    CRANBERRY CHEESE BREAD

    2 cups flour
    1 cup sugar
    1 tsp. baking powder
    1/2 tsp. salt
    1/4 tsp. baking soda
    2 tsp. grated orange peel
    2 Tbsp. butter
    Juice from one orange (approximately 1/3 cup--1/2 cup) -----I use a real orange.
    1 1/2 cup grated cheddar cheese
    1 egg
    1 cup chopped cranberries-- (fresh or frozen)
    1/2 cup chopped walnuts


    1. Heat oven to 350 degrees. Grease loaf pan.
    2. Measure flour, sugar, baking powder, soda, salt, and peel into bowl.
    3. Cut in butter.
    4. Add water to juice to measuere 2/3 cups. Mix in with cheese and egg.
    5. Stir in cranberries and nuts.
    6. Pour into pan...bake 60-70minutes. Check with toothpick..

    I use a wooden spoon for all of this....you don't even have to get the mixer dirty. YOU WILL ENJOY THIS ONE!!

    Well, since everyone is sharing their cranberry recipe, here is mine:

    CRANBERRY SALAD
    From Renee Winter, 2011

    This recipe is delicious, sweet, tart and crunchy. If you use green and red apples like, granny smith, golden delicious, braeburn, Fuji, pink lady or any other crunchy apple, it makes a beautifully colored salad.

    INGREDIENTS:

    1 bag of fresh Cranberries – chopped
    3-4 crisp apples – diced (leave the skin on)
    ½ Cup Sugar
    1 Large package of regular raspberry, strawberry or cherry Jello
    ½-1 Cup chopped nuts

    DIRECTIONS:

    Place chopped cranberries, apples and nuts in bowl and mix together.

    In small bowl, mix sugar and Jello together.

    Boil some water and mix just enough (maybe 1/3 to 1/2 cup) to dilute the Jello/sugar mixture.

    Add to mixture and toss well.

    Refrigerate for at least an hour and serve.

    Note: I've always wondered about using diet Jello. If anyone trys it with diet Jello, let me know how it tasts. Thanks.

    That sounds amazing - have never heard of cranberry bark

    Gerbie: do you use 2 small (4 servings) lemon jello or 2 large (8 servings) jello in your salad?

    I've never had that problem. As soon as I bring them home I wash, sort (never more than 1 or 2) dry and put in freezer. I buy lots cause we love em! Food processor -throw in a bag of frozen cranberries 1/2 at a time, rough chop, 2 seeded apples, leave on the peal, 2 oranges, use the zest the remove all white membrane, do a rough chop. Mix all together add 2 cups of granulated sugar (or equivalent) let sit for a while. Great w/turkey, then turkey sandwich, Pork, chops, roast - just get out a spoon and enjoy.

    I get dried cranberries. Take some to my neighbor who is homebound. She has pecan trees and fig trees in her backyard. We make trail mix and breads. She makes fig pecan bread and cranberry pecan bread.
