I'm a real soup lover. Thank goodness DH likes soup, too. I have a good recipe for a leftover ham soup, but this one looks so quick and easy I must try it.
Many of my specialty soups use leftovers. Here in Louisiana, one of our favorites is Turkey Carcass Gumbo. After slicing off all the leftover turkey you want to save, put the turkey carcass into a large pot of water and boil 20-30 minutes. Remove carcass, and set aside to cool enough to pick the meat from the bones, and save the broth made from boiling the carcass to use in the gumbo. Chop turkey into bite-sized pieces. Choose your favorite gumbo recipe, substituting this turkey meat and broth.
