    Prep Time: 5 minutes
    Yield: Serves 8
    Cost per Serving: $.38


    Ingredients
    1 10-oz. package frozen spinach, thawed and squeezed dry
    3/4 cup plain yogurt
    3/4 cup reduced-fat mayonnaise
    2 scallions, white part only, thinly sliced
    Salt and pepper
    Assorted crudités
    Preparation
    Blend spinach, yogurt, mayonnaise and scallions in a food processor until smooth. Season with salt and pepper. Keep covered and chilled until ready to serve. Arrange crudités around dip; serve cold.

    Chele, me too! :) When I see this at parties its hard to keep from taking the whole bowl!

    I love spinach dip. We dip ours in pumpernickle bread (if you can find it) Out here in the west, they just have no clue as to what it is. :lol: We now use the sweet hawaiian bread...and usually go through 2-3 round loaves or 5-6 bun type packages..

    I make mine a little different..and thought I share it with ya'll too.

    2 pkg thawed frozen chopped spinach
    1 jar Hellmans mayo
    1 pkg italian seasoning mix

    when the spinach is thawed, put in food processor along with mayo and italian season mix.. watch it go around until it's all blended. Pour out into bowl and cover and refrigerate till firmly set.. (if you can keep everyone out of it long enough) then enjoy!
