    Default Spinach Lasagne-No Pasta

    Basically, I tweaked a recipe to make it lower carb until I got it right.

    I substituted chopped baby spinach for the pasta and small curd cottage cheese for the ricotta:

    1 lb. hamburger meat
    1 medium onion, chopped
    1 clove garlic, minced

    2 cans (14.5 oz each) chopped tomatoes in sauce
    1 can (6 oz) tomato paste

    1 bag baby spinach

    3 eggs
    3 cups cottage cheese
    1 cup Parmesan cheese
    2 teaspoons parsley
    1 teaspoon salt; 1 teaspoon pepper

    16 ounces mozzarella cheese, grated

    375º.
    Saute meat in large saute pan; add onions and garlic. When browned, add tomatoes and paste. Cover and simmer 15 minutes.

    In a large bowl, whisk eggs, then mix in cottage cheese. Parmesan cheese, and seasonings.

    :
    Spread a couple of spoonfuls of red sauce on bottom of large casserole dish.
    • Layer of ½ spinach
    • Layer of ½ of cottage cheese mixture
    • Layer of ½ of mozzarella cheese
    • Layer of ½ meat sauce
    • Repeat
    Bake 30-35 minutes. Let stand 10 minutes before serving.

    *I also add mushrooms when cooking onions.

    This looks good. How many ounces of spinach is in your bag. My store sells different sizes.

    Don't know oz, but the smaller bag will do. When you chop it, it really shrinks.
