    Mine is a Squash Cake

    2 C Sugar
    1 C Oil (Crisco or Wesson)
    4 eggs
    2 C squash (pumpkin works too)
    1/2 tsp salt
    2 C flour
    2 tsp baking powder
    1 tsp soda
    1 tsp cinnamon

    Combine all ingredients. Bake in 11 x 17 ungreased pan at 350 degrees for 20-25 minutes.

    Frosting:

    3 oz cream cheese
    3/4 stick margarine
    1 tsp vanilla or almond extract
    3 C powdered sugar

    Nuts are optional for the top

    I use a recipe from Food.com that we absolutely love. It is a stuffed turban squash. The turban is one of those big ones that looks like it has a hat on top of it!
    If you type in Stuffed Turban Squash I am sure you will find that recipe. The one I make has bread crumbs, sausage, carrots and more in it. I will post the recipe later...it is late now and time for me to get to bed!

    Just fixed this last weekend. Added a drizzle of low cal. maple syrup, and used butter spray. (No cals.) Had roast pork, new potatoes, and homemade chunky applesauce.
    Even the grands liked it, despite grandpa's poor example. .............."Squash!!! Yuck!!!"..............................

    I do this with shredded zucchini (raw). Makes a yummy moist cake. Usually bake it in a tube pan. Frost and chopped nuts same as above.

    Yankee winter squash
    Cut a butternut or acorn squash in half. Take out the seeds, and fill cavity with breakfast-style sausage, Pour a generous glug of maple syrup on top of the sausage. Cover with foil and bake at 375* for an hour or so until sausage is done and squash is fork-tender.

    Butternut Squash Souffle - NY
    1) 2 lbs squash - wash, prick with tines of large fork & bake on a cookie sheet lined with tinfoil - 1 to 1 1/2 hours @ 350 or until skin looks soft
    2) let cool, seed & peel & cut into small pieces
    3)While cooling, in a food processor shred: 6 slices bread ( I use white bread) & 1/2 to 3/4 lb American cheese in a chunk
    4) Put squash in mixer & add:
    2 eggs, 1 stick melted butter
    Mix until smooth
    5)Spoon in bread & cheese & hand mix
    Place in greased casserole dish & bake @ 350 for 45 minutes to 1 hour until slightly browned on top & bubbly
    Enjoy!
