Strawberry Bread Pudding, No Fat Added
What do you do with a bucket full of freshly picked, very ripe, strawberries, some just laid eggs and a loaf of homemade bread that got squished in the freezer? Why, make bread pudding of course! Since I am trying to lose some of the weight that I gained back this last year, I did not add any fat, although it would be yummy with some pieces of butter added throughout. I also used a stevia-monk fruit, non-calorie sweetener in place of cane sugar. Here's my rough recipe, serves 3-4 people:
I cut off the worst of the squished bread loaf (about 1/2 the loaf ) and cut it into chunks and set aside. In the blender I combined 3 eggs, about 1 cup of whole strawberries, about 2 cups of almond milk, a couple packets of sweetener and a 1/2 teaspoon of salt and blended until smooth. I oiled a glass casserole dish and laid out the cubed bread, added more sliced strawberries and poured the mixture in the blender over it. Then, I sprinkled it all with cinnamon and some orange zest and popped it into a 375 degree F oven for about 30-40 minutes. Took it out of the oven, let it rest about 5-10 minutes, then spooned more than I should into a bowl and ate it down. Pretty good! (I think that I'd better have a salad for lunch.)
I know that there are some wonderfully rich and decadent recipes out there for bread pudding and they're wonderful, but so fat and calorie laden. This one is manageable for fitting into a healthy weight-loss diet.

Your recipe sounds delicious and is super creative. I just bought some beautiful strawberries I couldn't resist at the market and made this quick strawberry sauce from "The Food You Crave" cookbook.
2 pints (16 ounces) fresh strawberries, hulled
1 teaspoon fresh lemon juice
2 tablespoons pure maple syrup
Place the strawberries in a food processor and process them into a chunky puree. Transfer the puree to a small sauce pan over low heat and heat just until warm. Stir in the lemon juice and maple syrup.
Drizzle over oatmeal, pancakes, angel food cake, ice cream, etc.
Makes 1-1/3 cup, serves 4
This could fit a healthy weight-loss diet, depending on what one chose to drizzle it on.

If you're doing weight loss, eat the fat and get rid of the sugar. Sugar is not only granulated sugar, but also white flour in anything. That white dough just turns into sugar in your tummy. This type of eating is getting a lot of hype these day. It's not a diet, it's healthy eating. Your brain is made of fat and wants good fat: butter, bacon, fatty meat: the ones you like to eat.

This type of eating is getting a lot of hype these day. It's not a diet, it's healthy eating. Your brain is made of fat and wants good fat: butter, bacon, fatty meat: the ones you like to eat.

With all due respect, I didn't use sugar, I used stevia-monkfruit blend. I also used eggs, which have a lot of animal fat in them, if that's what you're going for. I also used whole-wheat bread, not white flour. Personally, I'm not on a Keto diet, but here's the info, just in case anyone else is.
