    Prepare 9 inch pie shell.

    3 Tablespoons cornstarch
    3 Tablespoons strawberry jello powder
1 cup sugar (1/4 cup if using frozen berries)
1 1/2 c water OR the juice if using frozen berries
    1 pint strawberries or (1 1/2 cup)

Mix dry ingredients thorughly. Add the water or juice. Bring mixture to a boil. Cool. May add red food coloring if desired. Stir in strawberries. Pour into prepared pie shell and store in refrigerator. I usually let set overnight.

I have a similar recipe ... makes the most delicious pie!
Or make it without the pastry, just as gelled berries in a custard dish.

At peach time ... do the same with a peach or orange jello and fresh peaches! mmmmmmmmmm :)

Just made this yesterday. I used Splenda and sugar-free Jello, and it worked out great!
