    Default Strawberry Shortcake

    This is very easy. Jim gets those containers of strawberries with the juice, and puts sliced bananas in it. Mixes it all up and spoons it over the biscuits, (or shells). Put the Cool Whip on top and then drizzle a bit of the juice on top of that. Oh boy!!

    I was at the store and they had boxes of twinkies marked down(I never eat them otherwise) I knew I had some strawberries in the freezer so bought them and sure saved time on making a dessert. Dee

    We just go to the local dollar store to buy the small pound cakes, slice them about 3/4 inch, and put strawberries and vanilla yogurt (I so hate whipped cream or any cream for that matter) on top of them. Yummy.

    I prefer to use store bought angel food cake with strawberries. I buy the reddi whip in spray can.

    My strawberry short cake
    Use any yellow cake mix with 2 whole eggs and bake
    Take out of oven to keep moist, cover with saran wrap and cool
    put about 1 cup of strawberrys in blender with about 1 cup water and sugar to taste
    leave cake in pan
    Cut cake into 1/2" squares and pour juice into cut squares
    Iced cake with 7 min frosting.

    7 MINUTE ICING
    2 EGG WHITES
    1 ½ CUP SUGAR
    5 TBS COLD WATER
    1/3 CUP WHITE KARO SYRUP
    ¼ TESP CREAM OF TARTER
    DASH SALT

    MIX TOGETHER AND BEAT FOR 2 MINUTES
    PLACE OVER BOILING
    WATER AND COOK TILL IT FORMS PEAKS
    REMOVE FROM HEAT AND ADD
    1 TEAS VANILLA
    1 TEAS ALMOND EXTRACT

    Since I found out you can make a little whipped cream for one by shaking in a jar for 2-3 minutes, I can have it whenever I want!! And then I save the jar in the fridge and rinse it with my morning coffee the next day for coffee "mit schlag".

    I know...I'm really dating myself here, but when I was a kid, my "step uncle" had a strawberry farm, so we got free strawberries all of the time. We always made our own shortcake using a sweetened, drop biscuit recipe and freshly whipped cream.

    The berries were different then...much smaller, more delicate, with an incredibly intense, strawberry flavor that you just don't find anymore. Last year I started growing heirloom strawberries, hoping to find that taste again. The berries were pretty good, but I didn't get many...at least not enough for strawberry shortcake. Hopefully, next year will prove more productive.

    Tropit, I make shortcake that way too. Just my usual biscuit recipe, with a tablespoon of sugar added. I bake in my toaster oven. Ooh, I have some strawberries from the garden in the freezer, and now I'm hungry!
