    Default Tomato Soup Cake 1

    Tomato Soup Cake Recipe 1

    INGREDIENTS

    UNITS: US

    1⁄2 cup butter
    1 cup white sugar
    1/4 cup water (I like the spring water the best)
    1 cup raisins
    1 cup halved walnuts
    1 teaspoon baking soda
    1⁄2 teaspoon ground ginger
    1⁄4 teaspoon ground cloves
    1 teaspoon cinnamon
    1 (10 ounce) can condensed tomato soup
    2 cups flour

    DIRECTIONS

    Pre heat oven to 350 degrees.
    Cream butter and sugar together.
    Sift together flour and all spices with baking soda in separate bowl.
    Add tomato soup to creamed butter mixture - rinse can with water.
    Gradually add in dry ingredients.
    Stir in raisins and walnuts. Both of these are optional.
    Bake these in greased/flowered loaf pans
    70 minutes or until toothpick comes out clean around several places in the center of the cake.

    My family loved this 45 years ago. I haven't made one in a long time. I think I used cream cheese frosting.

    Thanks, MaryKa -- I've never thought of tomato soup as a liquid for a sweet cake but most tomatoes are really sweet and with all these spices it might be similar to an Indian food flavor by the end. I do love spice cake! I can see how with no sugar (referring to the story in the Dumbbell thread) this recipe may not be sweet enough. I think I am going to try it! Thank you for posting this!

    Tomato soup cake was always a favourite, growing up. And the 'secret' ingredient is always good for a few gasps at gatherings.

    I had a can of tomato soup in my pantry so I decided to make this and see if my contractor could tell what the secret ingredient was. He couldn't, and he ate half of a loaf in one sitting!

    It was surprisingly good.
