    Default very good cauliflower soup.

    This is fast and delicious when I want a bowl of soup on a chilly day.

    I buy the frozen plain rice cauliflower.

    Put some cauliflower in small skillet (frozen). Add chicken bone broth (I use Zoup)
    Bring to boil and simmer for a minute or two.
    Temper one beaten egg and slowly add to skillet, mixing as you pour.
    Salt to taste.
    it's delicious. The flavor of the broth makes the difference. Sorry, Swanson won't work for me. Use a robust broth with lots of flavor.

    I add enough broth to the cauliflower to make it soup. No measurements of either. Make one bowl or more as you like.

    Interesting. . . I have a package of frozen cauliflower in my freezer. I might try this.

    I'm a sucker for buying those big bags of cauliflower chunks at Costco and not getting through the bag in a timely manner. Now I just saute some onions, add chicken broth and dump the bag (and any broccoli if there's that, too) and pressure cook for long enough to thoroughly cook the veggies. Then I stir, add milk, salt & pepper, and have a yummy pot of soup. Sometimes I also add shredded cheese or just garnish it with shredded cheese. Like you say, it's in the broth.

    I learned to cook without recipes as that was the way my grandmothers cooked. There was never a cookbook in the house. A few hand written recipes on the back of church bulletins in the cabinet. And that was saying what to add together never any measurements. I remember I wanted to make tea cakes and my grandmother said if you know what they look like then make them like that.

    I have some not so fresh cauliflower in my fridge. If it's still good, I'm going to try this recipe...thanks!
