    Default a very yummy cake

    A lovely lady that teaches quilting classes through our Parks and Recreation Department shared this with me. It is VERY good!

    Preacher Cake



    1c sugar

    2c flour

    2 eggs

    2 tsp baking soda

    ½ tsp salt

    2 tsp vanilla

    ½ c nuts (walnuts, or?)

    20 oz can crushed pineapple undrained



    Frosting



    8 oz cream cheese softened

    1 ¾ c powdered sugar

    ¼ c butter or margarine

    ¼ tsp salt

    ½ c nuts

    2 tsp vanilla



    Combine dry ingredients. Add remaining ingredients, and mix. Bake in a 9 x 13 prepared pan at 350 for 30 to 45 min. DO NOT overbake or will be rubbery! Optional: add cranberries, blueberries, raisins. Instead of frosting, sprinkle with powdered sugar.

    WHAT?? No butter or shortening ? I can't imagine a cake without it. I guess I've watched Paula Deen too much. I like the butter.

    I have this recipe but it is called Grampas Pineapple Cake on the one i have and it sure is easy and YUMMMMMMY. The best part of it is you don't use a mixer for the cake part just the frosting. Making one on Tuesday for some dinner guests.

    that surprise me too. Hopefully mine turns out as good as the one I tried. Gotta love Paula too!

    And you have to love the no butter, get enough in the icing. Sure does sound great.

    Think of it like this, a cake without shortening or butter has got to have a few less calories and fat !

    Sound just like one my grandmother used to make - she called it "No Shortening Cake" and it was delicious!
