I also have a very good recipe using arborio rice (used for making creamy risotto), but it does not have rosewater in it. If you would like it anyway, let me know and I'll post it here.

    Here 'tis! Hope you enjoy.

    ARBORIO RICE PUDDING

    1/2 cup arborio rice
4 cups milk or 1/2 and 1/2 (or a combination)
    Dash of salt
    1/4 - 1/3 cup sugar

    1/4 tsp. cinnamon
    1 tsp. pure vanilla extract
1/2 cup raisins, plumped, if desired

(To plump raisins, put in a shallow bowl with enough water to just cover. Heat on high in microwave for 30-60 seconds. Let cool, drain.)

Combine rice, milk, salt and sugar (start with minimum amount of sugar. You may add more later if you like). Bring to a boil. Reduce heat to low and cook 25-40 minutes, stirring often. When it begins to thicken, stir every 5 minutes to prevent sticking. When rice is done, remove from heat. Add cinnamon, vanilla and raisins. Taste for sweetness and add sugar to your taste if necessary.

Serve warm or chilled. If pudding is too firm for your liking after it is chilled, mix in a little additional milk or cream.

My Goodness! I forgot to include the instructions for baking this rice pudding instead of stovetop preparation. Although I've never done it this way, I don't see why it wouldn't work just fine. It sure would require less time-consuming attention!

Combine rice, milk, sugar and salt in a saucepan. Bring to a boil over medium heat, stirring often. Pour into a buttered 6-cup baking dish. Cover (aluminum foil will work) and bake at 325 degrees for 45 minutes, stirring every 15 minutes. After the 45 minutes is up, stir in the raisins, cinnamon and vanilla. Recover and bake another 15 minutes.
