what do you just "Throw together"?
#1
What dinners do you make that you just throw together with what is on hand - your "go to" dish when you can't think of what to make.
I like to saute some onions and garlic, add whatever vegs are around, and cook up some rice and if there is any leftover meat, throw that in. Mix all together. Sometimes melt cheese over the whole thing.
My mom used to make something we called Chicken Mess. It had cooked chicken that came in a jar (this is going way back), cream of chicken soup, a can of peas, and egg noodles. She passed away a long time ago so I do not have the exact recipe. It was good though.

My "go to" is a large pot of spaghetti sauce. I can use it with pasta, or frozen shells. I can pour some over chicken and bake it. I usually have some frozen sauce in the freezer so can pull it out and thaw quickly.

Ptquilts, I do sort of the same thing you do.
Leftover meat if available or brown some hamburger.
Toss in all the leftover veggies from the fridge or a can of condensed veggie soup.
Shred cheese on top
Cut can biscuits in fourths and put on top.
Bake until the biscuits are done.
We call it Leftover Pie.

   Mom used to call this Refridgerator Clean Out Casserole
My "go to" is hamburger casserole. I buy very large containers of hamburger, cook, drain and bag it up. I keep it in the freezer pre-cooked then when I want to make casserole I just take it out, break it up, put it in the pan. Then I cover it with a mixture of Cream of Celery, Cream of Mushroom and 3 cans of drained mixed vegetables. Top that with some slices of Velveeta and then add hash brown patties on top. Sprinkle with pepper and put in the oven at 350 for about 45 minutes to an hour---until the top is browning and the cheese is bubbling.
Or sometimes I make spaghetti. When we have left over spaghetti I mix it all together, put it in a baking dish and cover it with 4 cheese blend shredded cheese. I bake it until it's hot and the cheese is melted. DD hates left overs so I disguise it as a new dish. She loves my Spaghetti Pie.

I almost always have cooked/diced potatoes in the fridge. In a rush, I put them in the skillet, along with sliced paper & onion. When it's golden on the bottom, I turn them over, then put on lowest heat & with a lid on top. That's when I make scrambled eggs to go with & have toast on the side.I'll toss in meat if there's some cooked....or add mushrooms to mine & cheese to DHs.

Brown Rice is my go-to. When kids were little it was our pay-day-eve meal. Similar to what you've all written, really.
Brown Rice can be cooked like other grains - like you would cook pasta. Bring a pot of water to boil and dump in a cup of Brown Rice. Cook it about 20-30 minutes uncovered - taste-test for doneness. When done, dump into colander to drain.
Meanwhile, in large skillet or dutch oven, saute onions, garlic, celery, carrots, mushrooms, left-over meat and/or small slices of raw fresh chicken, and left-over veggies in lots of olive oil. Season with lots of garlic salt and toss in Brown Rice.
Yummy & cheap & the kids (now 39 & 33) Still ask for it.
