What we had for supper

I sorta followed a Rachael Ray recipe....omitting this and adding that....
doing this later than I did that....
Potato, Spinich, Tomato Soup
I boiled 2 quarts of water in a large pot and added 3 large, peeled potatoes THINLY SLICED...and 2 TBSP beef bouillon and fresh ground pepper.
In a skillet I sauteed a large onion, minced and 3 cloves of minced garlic in veggie oil (only bc I was out of olive oil...I usually only use olive oil).
I let the potatoes boil for a while before adding the garlic/onions...
When the potatoes were done and starting to fall apart, I added a small can of Ro-Tel (yes, it did make it a bit spicier than I thought it would after adding it to ALL that!) and a small can of stewed tomatoes. (about 14 oz each). I included the juice.
I also added a can of corn with about half the liquid.
When this started to cook again, I turned off the heat and added a bag of raw baby spinich.
I saved my excess oil from the onions/garlic and drizzled it over hot dog buns that I took apart...I also sprinkled with garlic powder and toasted...and turned over and toasted again....
I added Tabasco sauce to mine at the table!
This was a HIT!!! The flavor was great! I'm thinking of adding chicken or shrimp next time. Possibly some okra and rice!!! (almost gumbo, eh?)

Sounds yummy, but What is Ro-Tel? I am enjoying all the different recipies we are getting on here lately but some times I don't understand what all the ingrediants are :lol:
