Cabbage Casserole in 9X13
2 -3 lbs. of ground beef or more
1 large onion chopped
1/2 a pepper chopped (I like to use the orange, yellow or red as they are milder)
1/2 cup rice ( I use 1/2 cup raw basmati rice cooked in water to just a la dente)
6 cups cabbage sliced into slivers ( it is hard to measure cabbage but I use about 1/2 a fair size head)
I jar Ragu or similar spaghetti sauce 640 ml
Brown the meat, onion and pepper in a skillet until meat is brown. Add the cooked rice. Add salt and pepper to taste. In a greased casserole dish, lay about 3 cups of the cabbage to cover the bottom of the dish. Spoon 1/3 Ragu over the cabbage. Spoon the meat mixture to cover the cabbage. Spoon of 1/3 Ragu onto the meat mixture . Cover the meat mixture with the rest of the cabbage. Spoon the rest of the Ragu over the cabbage to cover it. Cover with foil and bake at 350 for 1-1/2 to 2 hours or until a knife tip into the cabbage tells you it is tender.
This is a recipe I just wing so I tried to remember the proportions.

Well last week it was smoked turkey legs and beans (less fatty than ham hocks) with sweet cornbread muffins. Yesterday I baked a huge loaf of egg wheat bread and am thinking about making a meatball stew for tomorrow. Yesterday was oyster stew for lunch. Love winter cooking!

Chicken soup with rice and homemade biscuts. It is COLD here in Michigan today, 7degrees at the moment. Frozen chicken pieces in the crock pot on low then off to work I went. When I get home I'll do my magic and turn it into soup to warm the insides after shoveling the outside. Happy winter everyone!

Hi today, temps will be dropping, so I decided to make homemade turkey soup with biscuits. I have a lot of turkeys in my freezer as wally here had some on sale for .50 cents per pound. Wow yup you read right. .50 CENTS PER POUND! So I took advantage of a great sale and bought a few since I have 2 freezers. DH helped me cut a few in half so I wouldn't have to roast a whole turkey at once. Whatever you can do with a chicken, you can do with a turkey. I lovemaking homemade soups, it lasts a few days around here. I also freeze some for later date. doing this allows me more time to sew...lol if ya know what I mean.

16 bean soup with seasonings by me, not the packet inside the beans.....hopefully healthier..... Would love cornbread with it, but am going to sacrifice since I need to lose some of the Christmas cheer I enjoyed.....LOL!

I have mom staying with me here on Long Island for a couple of weeks since my dad recently passed. (Could not leave momma alone for the holidays). She hates the chilly temps so today I took the leftover turkey and made a huge turkey pot pie using the Bisquick recipe online. It's extra large so it was in the oven for nearly 90 minutes, but it just came out crispy, golden and smelling delicious! I can't wait to dig in....arugula salad will be on the side. Yummy!
