    Leftover homemade Chinese-ish food is on the menu for tonight. No idea what to call it and it's not even remotely authentic except by accident; it's tofu and a bunch of random veggies, stir-fried and flavored up with store-bought szechuan sauce. It's tasty stuff despite its questionable lineage.

    Yum that Chinese-y food sounds good! I made a regular supper tonight. My husband was very pleased. It was round steak chunks dredged in seasoned flour and browned, then baked with carrots, peas, in dry onion and cream of mushroom soup mixed with water. We had french bread with it instead of the fat noodles I originally planned because I was tired.

    Tuscan bean soup with shrimp. And sweet potato salad.

    Beet Soup!
    I am a widow, and disabled, so I don't cook much. Awhile back I opened a few cans and to my surprise, I had a very tasty soup! I like soup anyway, but this is not only quick and easy, but very good.

    Start with: In a large 4 Qt saucepan sauté some chopped onion in a little butter until softened.
    Add a few cans:
    1 can black beans, rinsed and drained
    1 can hominy, do not drain
    1 can diced beets, do not drain
    1 can pinto beans, or another type of beans, such as garbanzo (optional)
    1 can chicken broth
    Black pepper, (no salt needed)

    Heat to a simmer and cook a few minutes so soup is plenty hot. This makes a lot of soup, but I save it in fridge and enjoy it every day as long as it lasts.

    We had chicken fajitas with king crab on the side. My husband had a salad, but I decided to just have sliced tomatoes. No desert - just not hungry for anything else.

    Quiltingcandy, I don't think I have ever seen a combo quit like that. Sounds pretty good to me.

    Tonight is taco salad and watermelon on the side.

    Tonight is KFC.....LOL

    I have two appointments today plus grocery shopping. So a full day in town for us and no cooking for me tonight.

    This weeks menu will consist of :
    Tacos with homemade mexican rice
    Chicken Piccata with angel hair pasta
    Crab and shrimp cakes with cole slaw and a green salad for me
    Hamburgers with homemade oven baked fries
    Pinto beans with bacon and cornbread
    Rabbit Spaghetti (our favorite)
    and usually one night a week we have breakfast for dinner.

    Last night was Mexican take out,

    It's still very hot so tonight is build your own chef salads
    tomorrow will probably be another salad variation chicken Caesar, spinach salad with shrimp, or maybe tuna salad sandwiches.
