    Chicken Spaghetti: Cook chicken breasts in crockpot then remove and shred. Set aside. Undercook 1 lb. spaghetti, drain and set aside. In crockpot combine 1 can RoTel tomatoes (with chiles) 1 can mushroom soup, 1 can cream of chicken soup, sliced mushrooms, 1 lb. original Velveeta cheese (cubed up), dried onion flakes, black pepper and 1/2 cup chicken broth. Stir in shredded chicken and cook on low for 2-3 hrs. Add spaghetti about 30 minutes before serving. Warning: makes a lot ! I buy fresh mushrooms on sale, slice and freeze on baking sheet then store in plastic bag. Much better than canned.

    Yesterday: Honey baked ham (frozen from Easter), au gratin potatoes, peas, 5 cup salad (like an ambrosia), and sliced strawberries for dessert.

    Tonight is leftover taco fixings. I made a huge batch yesterday when our 2 sons and 2 grand kids were over.

    Vegetarian tonight, just because.....
    lots of fresh spring asparagus with my grandma's Hollandaise sauce,
    potato salad,
    some quickly sauteed fresh baby spinach with lemon juice,
    sliced vine-ripened tomatoes,
    raw carrots sticks,
    and anything else that's in the hydrator drawer in the 'fridge.

    Reminds me....gotta make some sweet tea!!

    Left over chicken in dark southern gravy over rice, field peas and homemade biscuits ! Top it off with a piece of lemon coconut cake my sister-in-law made for us! Yawn ... Now it will be time for tv and bed ! Happy quilting you all

    I made Italian inspired Meatball soup in the crockpot.
    32 ounce beef broth
    1# frozen meatballs (I had large bag so used 36)
    1 can diced tomatoes
    1 - tsp. Italian herbs
    2 cloves chopped garlic
    Cook 4-5 hours on low
    Add 3 cups chopped Kale
    Cook another hour

    Sprinkle Parmesan to serve
