Wild Rice Chicken Artichoke Salad
I've been following the thread about recipes for hot weather and after making this realized this is my favorite recipe for summer meals. It is best if made several hours or a day before eating. No exact measurements - suit it to your tastes. Serve cold. I hope you enjoy it!
1 box Uncle Ben's long grain & wild rice, prepared as directed and cooled
3-4 chicken breasts, cooked and shredded
handful of black olives, sliced
1/2 red or green bell pepper, diced
1-2 green onions, sliced
handful of slivered almonds
1 small jar of marinated artichoke hearts, reserve liquid and chop artichokes
1-2 teaspoons curry powder, to taste
1/3 to 1/2 c. mayo or salad dressing
Combine artichoke liquid, mayo and curry. Set aside.
Combine rest of ingredients. Stir in mayo mixture. Mix well. Cover and refrigerate for several hours or overnight.

You're most welcome! Fogot to mention - this may be the secret to a happy marriage. Shortly after I married, my husband's sister shared this recipe and said, "Make this! It's his favorite!" After more than 30 years, it's still his favorite! LOL

You can adjust it to your needs, I usually get two meals out of it... so 6-8 large servings sounds about right. I'm feeding two large men LOL!
Certainly you could make it without chicken, I have used it as a side dish that way.

Thanks for sharing the recipe with us. I'm a hardcore lover of chicken breast recipes. I always find time to try new recipes at home. Your recipe sounds really delicious for me and tried it at home last day. I got all the chicken herbs and spices from Horton Spice Mills store nearby. It tasted so good and an ideal recipe for summer meals. Keep posting new and spicy recipes! I would love to try more recipes like this.
