Zucchini Bars (Tastes like apples)

My recipe tells me to add 1/2 cup of the mix to the zucchini when it is finished cooking - I think it would be rather soupy without doing this. I just made a pan, put it in a 9 x 13 to make the crust thicker, added the 1/2 cut to the zucchini and it is almost gone!! My parents had never had it and loved it.

I learn something new every day. I've never heard of putting some in the zucchini but if it works sounds great. I'm sure it would taste great either way.
I made 3 batches last night. I cook the zucchini til almost all the liquid is gone. Then put in Qt. freezers bags to freeze for a later date.

I made this today and it was very good. My husband has snacked on quite a few already. While making it I thought that it might be good to make a pie crust, bake it and then put in the zucchini filling and do a crumb topping like a Dutch Apple Pie. The only difference I made from the original recipe was to drain some of the liquid because I thought it might make the cookies cut better. I am sure I will be making more of these.

As I posted, the addition of 1/2 cup of the crumb mixture makes a nice filling!! I have used a regular crust with this filling - it is wonderful!! And, there is a recipe that you make a custard zucchini pie - tastes like custard anyway!! I found it on the web!

Neat! The recipe calls for a 9 inch pie crust they say to use a food processor and 1 cup diced zucchini, 2 eggs, 1 c white sugar, 1/2 c melted butter, 2 T flour and 1/2 t vanilla. they say to process untill pureeed. Pour this into the pie crust.
Then take 1/2 c flour, 1/2 c brown sugar,and 3 Tablespoons butter, cut together until coarse crumbs. Sprinkle over the pie. Bake on a sheet at 350 for 45 min, until slightly browned. I didn't use a food processor, I used my tupperware chopper and it worked beautifully!! Enjoy

2/3 c. lemon juice
1 1/2 tsp. cinnamon
1 c. sugar
3/4 tsp nutneg

Put into 1 quart freezer bag and freeze for later use. Lay flat and stack them. When ready to use , thaw and make flour mixture.
Mix well
4 c. flour
3 sticks butter
2 c. sugar
Pat 1/2 the mix into a 12"x15"x1" baking pan.
Bake @ 350 for 20 mins.
Add 1 tsp. cinnamon to rest of flour mixture & set aside.
Remove from oven
Spread zucchini mixture over top of hot crust and cover with rest of flour mixture. Return to oven and bake @375 for 25 to 30 mins.

Just finished dinner and to full for dessert, but did have a quality control bite. Mom and I both agree, if we didn't know there were no apples in it, we would have sworn that there was!!
