I ordered a box from The Peach Truck. I wasn't that impressed. They were juicy but didn't have a strong peach flavor. It's hard to find fresh good peaches in my area. Even at Whole Foods. Most foods there are not that great though to us. I usually buy frozen for baking. I make peach fried pies and peach cobblers.

He's finally retired but I had the same peach guy at the farmers market for the last 20 years. He always said that refrigeration killed the peach taste and that's why his were so good. Also why you had to use them immediately! When my son still lived at home we would go through close to a carton per week during peach season between fresh and cooked.
I'll have to pull out my recipe file, but I typically make things more like crumbles or cobblers than pies, and just cooked peaches/pie filling is great hot over vanilla ice cream or with a bit of whipped cream
Back in the old days, people canned. Today it is amazing what we can do with ziploc bags and the freezer! Especially when it is hot outside and the peaches are not holding up -- chunk them up and freeze them and deal with them on another day.

I make peach pie filling in a jar. I like the recipe because it can literally be made a jar at a time. The original recipe calls for tapioca but I find Clear-jel works much better. But it can be hard to find in Canada. I just opened my last jar last night. It had been on my pantry shelf for 3 years and the peach crisp still tasted like I made it with fresh peaches. I can post the recipe if you want it.

We live in Georgia now. The only places to get really good peaches are at a local farmers market or go pick ourselves at an orchard. We have a peach tree that had lots of them but they had a disease. Going to try and figure that out soon.

we used to can them....they were good....now I just slice them up and mix with plain greek yogart for breakfast. I sometimes add some blueberries or walnuts. I don't think we used to add a lemon slice to each jar like we used to with the pears....loved those canned pears and we would fight over who got the yummy lemon slice.
