The hubby is most definitely Keto and loves it. I still struggle with being low carb... He lost about 200 pounds and has kept it off for about 2 years now. I lost a hundred but I've got my covid 20 to take back off.
We don't have an instant pot or an air fryer, both of which we have been told will change our lives. So while I do have a lot of meal suggestions, none are immediately right for your request. But I'll be watching to see what the other folks have to offer.

not keto here, because of my health problems, keto is not recommended for me. I do try and limit my carbs though to 45 a meal. (whole grains, beans, fruit mostly) I haven't' started using my instant pot yet though cuz it is too much work....I know, crazy. right now, I am eating my veggies off the vine. My fruits are also fresh and require no cooking. Meat, I basically pop in a roasting pan and let it roast. I guess I am not a fancy cook.

The hubby who is pretty strictly Keto, considered "ketovore", and he is usually around 25 carbs as an active male in maintenance. He does a cheat day maybe every 2 months, that's usually an asian buffet and he still makes smart choices but he allows himself carbs.
My low carb diabetes control guidelines are generally considered on the low side, my goal is/was 100 per day, even my nutritionist said I could go up a bit from that. Most of my eating was not so much about weight but about blood sugar control, but when I'm eating well and losing weight, I'm down more to around 60-75 carbs. I am just not willing to give up half an apple or banana a day which is pretty much all it would take.
Hubby is very happy eating mostly meat, I'm more plant/grain based and always have been. I'd rather sit down to a big bowl of salad -- which can be keto too, but I also am having dental issues and don't have much to chew with either meat or vegetables.

Ive been Keto since 2019 lost 45 pounds and have maintained my weight since. I try for 25 or less net carbs a day, eat 1 meal a day and usually just eat meat and a veg and anything else I may eat is done in a 3 hour window. So, my day is 21 hour fasting, 3 hour window for eating. Sadly, my Instapot doesn't get as much use as it used to. I do use my Sous vide far more since I eat a lot of meat and I love it!
