Machaca beef in the crockpot

I posted that I was making this and several asked for the recipe, so here it is!
You will need a large crockpot, mine is a large oval one, but a round one works...
A beef roast about 3 pounds trimmed if you like.
1 package of Taco seasoning mix
1 medium onion finely diced
1TBSP garlic powder
4 cups of water
* 2 cans regular ro-tel tomatoes* optional
Place beef roast(the cheaper the better) into the crock pot
sprinkle the taco seasoning and garlic on top, pour on the water and toss in the onion..cover and turn on high..cook for about 6 hours until tender, then using two forks, pull it apart so that it is shredded beef...
at this point I turn it down, add 2 cans of ro-tel tomatoes and let it cook down.
Store in the fridge or freezer until needed. This size roast will make enough for 3 meals since it is just hubby and I.
I use this as burrito, enchilada filling and for tortilla soup.
It is crazy good...
you can also use chicken breasts if you like..same thing..but with chicken!

hubby just loved it, topped with sharp cheddar and black olives and diced green onions...and a salad on the side..
I can not eat the tortilla, so mine was meat, and cheese in a backing dish then topped with onion, olives and diced tomato....really good!
