Need mashed sweet pototoes recipe
#1
I went to a catered luncheon at work and they had the best mashed sweet potatos! It almost tasted like pumpkin pie.
I could smell cinnamon but that's all I could figure out.
I've never eaten sweet potatoes before, if you can believe that. My parents, in-laws etc are strictly white potato folks. So I was really surprised how good they were.
I want to make them for the holidays.
I've googled and found several recipes but some require eggs, but some don't, alot say add marshmallows although I didn't see any in the meal I had.
I'm not sure which recipe would be what I'm looking for.
Do any of you have a favorite mashed sweet potato recipe that tastes almost like pumpkin pie?
Thanks-

I usually bake my sweet potatoes. However, Betty Crocker makes a good boxed instant mashed sweet potatoes. I'm not usually a boxed potato user, but the sweet potato one is very good & easy to make. And, sweet potatoes are very good for you.

Sweet potatoes are something you either like or hate.
If you make lots - they're never eaten.
Make a few and they're gone in the first sitting.
Here's how I made 2 sweet potatoes for a LAZY DAY of cooking - BUSY day of doing everything else.
2 washed sweet potatoes into a pot of water (make sure they're covered completely with water)
Bring water to a BOIL (not necessary to let them boil over - but mine did because I forgot about them - luckily hubby discovered them when he returned home - I was in the basement!).
Let them simmer for 15-20 minutes.
Shut the gas off. (I did this because I knew I'd forget about them again :()
After a while (or in my case when I remembered they were still in the hot water) stick a fork into them. They're done when there's just a bit of resistance putting the fork in.
Take them out of the hot water and let them cool.
When ready to make for dinner, peel and cut into uniform pieces. Place in a casserole dish, sprinkle on brown sugar and dabs of butter on top. (You could add other seasonings like cinnamon, pumpkin pie spice if you like).
Bake in a moderate oven (350=375) until bubbly (20-30min?). Then I stirred the potatoes and put them back in for another 5-10 minutes to carmelize the butter/sugar mix.
EASY! YUMMY! and REALLY VERY GOOD FOR YOU if you don't overdo the butter!

My very simple way!! Cook Sweet potatoes in microwave, ( two big ones take about 7 minutes) until a fork goes in and out easily. Peel taters while still hot( use something to protect your hands from heat). Put taters in a bowl, dump in a big glob of brown sugar and at least half a stick of butter, and a teaspoon of cinnamon. Beat with mixer or masher. Place in casserole dish and serve. Can add marshmellow on top if you like, bake until they are browned on top. The sugar and cinnamon really are to your own taste. Add what you like. My guys like a lot of brown sugar, and a good taste of cinnamon, so I just taste until I have what I want. I usually have at least 4 big sweet potaotes. Good leftover too, ust reheat.

I make glazed sweet potatoes. Slice canned potatoes into melted butter/margarine in fry pan, add brown sugar, heat and stir till potatoes are warm/hot. Of course I don't have any amounts and just 'dump'. Start with a couple tablespoons of margarine/butter (I use 'can't believe it's not butter'), add 1/2 cup brown sugar--you want it like a thick syrup, not runny then add your potatoes.
Also, our Thanksgiving sweet potatoes had marshmallows--you mixed everything together then put the marshmallows on top. And yes they are yummy this way too!

We make them the same way we make regular mashed potatoes. Boil the potatoes, mash with some milk or other liquid (we use non-dairy rice milk), (non-dairy) butter and cinnamon if you want it. We usually use an electric mixer to make the potatoes smooth and creamy, with no chunks.

I've made them different ways, but SaraSewing's recipe is like mine, and they "are" the BEST. Its like eating desert! If that isn't what you're looking for, at least try it sometime....sooooo yummmmy!

If you really enjoyed the ones at your luncheon, I would call the co that catered, explain your situation and ask how they made them. I bet they would tell you what is in them. It is worth a try..
