This very problem is what forced me to be creative on the first quilt I completed. I was determined to NOT buy any more fabric so I used fabric from the front and did a clever (I thought) pieced design on the back to make it all work. Since then I try to incorporate something nice into the backing. Have fun with it.

Piece it, you could put a strip at the top and at the bottom and it lookes planned. I do that sometimes or you could make/use any extra blocks in the center of the quilt back. Don't stress it will be okay no matter how you choose to finish.
