One rule of thumb to remember any time your ordering online, look for the little padlock up at the top of your checkout/order screen if it's locked it means the site is pretty much secure (as any site can be these days with hackers), if it's not locked it's better to do you order over the phone. My DH works in IT security so I learn all kinds of things from him. Hope this helps settle your concerns a little bit.

Sheila_H has some good advice about the padlock. Also look for "https" instead of "http" in the URL prefix for the payment page.
However, calling in an order only gives your credit card number straight to a person who you don't know.
If you have doubts about security (and that's a healthy concern to have), simply use a prepaid credit card or a debit card that is not tied to your primary account.
