Using a serger for piecing quilt AND what color thread to use

My husband bought me a serger for my birthday. :D He's so sweet!! I also have a standard sewing machine.
I plan to begin working on my baby's bedding this week incluing a quilt.
Any tips that I need to know about using a serger to piece the quilt blocks?
Also, the quilt will be black, white, and khaki/tan. What color thread should I use? Black? White? Tan? Something else? I've got to be able to get it in maxi-lock serger thread, so my options may be limited.
Any tips would be GREATLY appreciated! She'll be here in 2.5 months so I REALLY need to get on this!!!!

:D hi I have had a serger for many years its a baby lock and only has 3 spools i made a quilt for my grandson several years ago out of Denim and surged the edges then I sewed it so the edged would show on the top i used red thread on blue denim and tied it with red yarn he liked it so well that when he got older and had a full size bed he brought it back and said Grandma can you make this bigger to fit my big bed so I did I used flannel on the back as with the denim it was really heavy and didn't need a lining
