there are lots of flannel quilt patterns out whole books- start browsing the right one will catch your eye
do a search for flannel quilts,
plaid quilts
there are books and books of them

Bearpaw is a nice block for plaids. Another good one might be churndash. When I did one a few years ago, I did the bearpaws, as the guy was an avid hunter and that just seemed to be the logical choice.
