This butter tart recipe comes from Cindy Snetsinger in Brantford, Ontario, who got it from her grandmother. These butter tarts are runny - but not too runny - and delicious.
Prep Time: 30 minutes
Cook Time: 10 minutes
Total Time: 40 minutes
Ingredients:
Pastry
Blend the shortening, salt and the flour with a pastry cutter, or two knives, until you've created a uniform mixture that is crumbly and about the size of frozen peas.
In a separate bowl, mix 1 egg, 1 tbsp white vinegar and 2 tbsp cold water. Add to shortening and flour mixture.
Mix all ingredients together, but only until just mixed and no more.
The key to flaky pastry is not to overhandle the dough.
For ease of handling, make a ball of the dough, wrap in cellophane and place in freezer for 10-15 mins. Roll out dough onto floured surface to about the thickness of a CD case.
Using either a cookie cutter or something like a jar lid, cut out circles from the dough. Press dough circles into a muffin pan.
Filling
In another bowl, mix well corn syrup, brown sugar, melted butter and egg. Add vanilla and stir in currents.
Spoon filling into pastry shell to just below the rim.
Bake at 400 for about 10 mins until golden brown.
Makes about a dozen tarts.

Well? I have chocolate, wine and some tasty tidbits. Can I bribe anyone? Anyone want to come and sample what I have and maybe do some peeking? Oh yea...I know where some nice fabric stores are too!

ljs317-- this sounds like an elaborate ruse to get out of cooking x-mas dinner, wrapping presents, and finishing my x-mas gift(s). if the pain meds are good enough you may find that funny. otherwise..... i just hope you will be ok. christmas is in your heart, and children's smiles, and assorted kindnesses. i hope you will be able to latch on to it, broken bones and all. i am so sorry for your pain and difficulty. i wish you the very best the holidays can bring! love, joy and peace!

terri-- what direction from grann of 6 do you live? and how much time? maybe if we rub our two boxes together we can either wear out the wrapping paper or set them on fire, and then snatch the goodies out before the flames get too high! or i could bring my dogs and turkey gravy, ( no, we're not eating the dogs). we'll smear the gravy on the boxes and let the dogs have at them. i don't drive at night so we'll have to do this early in the morning , (about 6a.m. on thursday??) works for me. you'd better p.m. me quick!! tell anyone else in the neighborhood!! P-A-R-T-A-Y!! WOOHOO! B.Y.O.S (scissors). i'll pick up grann on my way by. her dogs will have to stay home-- one bite of either one and the whole box will be swallowed! ooooo, i'm so excited!! I CAN"T WAIT!!!!!!
