apple crisp for one
here it is apple season and I have been craving apple crisp, but DH is trying to lose weight and I don't want to tempt him. So I got 3 small apples from my tree, sliced them thin and tossed with cinnamon and sugar and put in a 5" diameter pyrex bowl. Mad a crumb topping from about a T. of butter, 2 T. Flour, T. brown sugar and a sprinkle of oats. Mixed it all together and covered the apples, 3 minutes in the microwave and it came out perfect!!
Wow, and I felt so righteous eating my fruit for the day, lol...

Yum! I am going to use up some pears tomorrow that I was given in a pie. I have a recipe from Allrecipe and I hope it turns out. Some pears get soft when cooked and some don't. I have no idea what these are, it will be a surprise.

Well my pear pie turned out better than I thought it would and it is delicious. I will definitely be making another one as soon as more pears get yellow. I have made tons of apple, cherry, peach, plum, pecan, pumpkin and other pies before but not pear.

We do something similar. I saw this at Montanas once and we've done it ever since.
Use a 2 cup Pyrex measuring cup and make your mini crisp the way you like it. I like straight apple crisp, or nectarine. DH likes straight apple or he'll throw other things like berries in or rhubarb during rhubarb season. We bake ours in the oven at 350 for about 35 - 40 minutes (but keep an eye on it, if it's browning too much, it might be done.) This way we both get exactly what we like. He usually finishes his in a sitting, mine is breakfast the next day.
Just leave some space at the top to catch the boiled bits.

Oh, tartan, do you live anywhere near Niagara Falls? We used to cross from the u.s. and go to my riding lessons at font hill and pick up bags of cherries and peaches on the way home, and man! Were they GOOD! By the time we got back to the border we just had a bag of pits to declare! Best fruit EVER!! Lucky you!
