Carrot Cake with Caramel Frosting & Toasted Coconut
Just made this tonight. Soooo good. Wish I could share it with all of you.

You will need the following ingredients:
1 cup sugar
3/4 cup brown sugar firmly packed
4 eggs
3/4 cup applesauce
3/4 cup vegetable oil
2 tsp pure vanilla
3 medium carrots shredded
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp pumpkin pie spice
2 1/2 cups flour
1 batch of salted caramel frosting (or regular cream cheese frosting)
1 cup coconut toasted.
Beat eggs, add sugar, vanilla, applesauce and oil, beat well. Add baking soda, baking powder, salt, and pumpkin spice, beat well. Add shredded carrots. Add flour and beat well. Divide batter evenly between three sprayed and floured 9" cake pans. Bake at 350 degrees for about 20 minutes until a toothpick in the center comes out clean. Cool on wire racks. Heavily frost the top of each layer with caramel frosting. Top with toasted coconut. Peggy

Carrot cake is my favorite cake and caramel is one of my favorites, too. I would never have thought of the two together, but sounds yummy. Do you have the icing recipe? I have a Carrot Cake recipe that uses crushed pineapple. It makes a bit lighter tasting cake. I love carrot cake anyway you fix it.

Try going up to the actual posting & under the picture you will see a link to her blog. That is what I clicked on. Once on her blog the frosting recipe is in the column of recipes on the right hand side of the page. It's close to the cinnamon roll recipe.
