Crockpot Posole (Mexican Stew)
CROCKPOT POSOLE: Serves 6
1 -½ lbs. country style pork ribs (boneless) cubed
1 lg. onion, chopped
1- 29oz can white hominy, drained
1 - 15 oz can fire roasted, diced tomatoes
2 Tbls. Minced garlic
1 - 4 oz can diced green chilies
1 or 2 Tbls. Chili powder
½ Tbls.. Ground cumin
1 Tbls. Dried Oregano
1 Tbls. Dried Cilantro
1 can refried beans
Carnitas Mexican seasoning (use a generous amount on the cubed pork)**
1 Tbls. Veg. oil
Put seasoned pork in frying pan with veg. oil, sauté until browned, add onion to pan and sauté until softened. Put pork and onion in crockpot. Add all other ingredients except refried beans. Cook on low 6-8 hours. Add beans about 30 min. before posole is done.
**Note: Can find the Carne seasoning in Mexican section of store. If it’s not available you can use Schilling or McCormick’s Fajita seasoning instead.
