Fruit Loaves
#1
In a large bowl mix by hand until crumbly:
4 c. flour
2 c. brown sugar
1 1/4 c. margarine
Add and mix until all fruit is flour-covered:
1 lb. raisins
1 lb.cut-up dates
1 lb. currants
Add and mix together:
2 tsp baking soda dissolved in 1/2 c. warm water
2 c. warm milk
Bake at 250 degrees F. 2 1/2 hrs or until done.
This is SWEET. I bake it in 4 foil loaf pans but you can use a bundt pan. Loaves may be frozen...wrap them in plastic wrap when they have cooled.
The lady who gave me this recipe many years ago, told me that you have to bake fruit cakes at lower temps than other cakes. She was a good friend to me when I was a young housewife and mother. She died last summer at the age of 96.
I'm not fond of sweets but I make these loaves for my husband.
