Here's a recipe from my blog. You can make it the night before and then reheat individual servings in the microwave.

I have a simple french toast recipe. The night before assemble and store in frig.
1 cup 1/2 N 1/2 low fat
3 eggs
1 1/2 tsp vanilla
cinnamon
any kind of semi dried bread, about 4 to 6 slices, cut into 1 inch cubes
Use a 8X8 or 9X9 square glass pyrex pan and spray heavily with Pam
Cut up enought bread to fill pan 1/2 way and sprinkle cinnamon on top.
Mix all wet ingredients well and gently pour over top of bread. Try to get all the bread wet.
Cover with plastic wrap and let sit overnite in frig.
In morning, take plastic wrap off and cover with tin foil. Place in cold oven.
Turn oven to 350 degrees and bake 30 minutes. Take tin foil off top and bake another 20 minutes.
Serve with powdered sugar on top or plain with syrup.
You can change the flavor by adding a tablespoon of maple syrup instead of vanilla.

Try quiche. I use store-bought pie crusts. These can be baked the night before and reheated or just assembled quickly in the morning -- cook the bacon ahead of time. I have two favorites from the Kraft foods website. Even the guys in my family like these! This year I'm making them with Egg Beaters to cut some cholesterol, since the weekend will be filled with lots of rich food I'm trying to cut fat or sugar where I can without sacrificing taste. Serve with fruit salad and refrigerator bran muffins (batter is made ahead, stored in fridge, just pop into muffin tins that morning, or bake the night before and reheat; I make the muffins with unsweetened applesauce replacing the oil). Here's the links to the quiche:

Just remembered that there were several recipes submitted previously on the QB for Baked Oatmeal. I had thought about trying one of them also for a holiday breakfast...may do that this year. I'll still do the quiche just in case the oatmeal doesn't go over too well. Here's some links:
