Peanut Butter Cups - Makes 125 pieces

This recipe freezes well too! I should mention this recipe comes from "best of the best" cookbooks.
Peanut Butter Cups
- 1 pound butter, softened
- 2 cups peanut butter
- 3 tsp. vanilla
- 2-1/2 - 3 lb. powdered sugar
- 1 pound dipping chocolate****
1) Cream butter and peanut butter. Add vanilla. Add sugar; form into small balls.
2) Pour little bit of chocolate in the bottom of paper candy cup. Drop ball in while chocolate is soft. Pour more chocolate on top to rim of cup. These balls can also be dipped in chocolate using a toothpick or dipping fork.
****Melt dark or milk chocolate pieces in a double boiler or microwave.

Your welcome, everyone!! I might add that if you use toothpicks to dip the balls in chocolate with that if you freeze the balls first, they'll stay on the toothpick without sliding! :D :D
