Quick and Easy Granola Bars
Pre-heat oven to 350F.
3 cup uncooked regular oatmeal (rolled oats)
1 can (14 oz.) sweetened condensed milk
1 tsp. cinnamon
1/2 - 1 tsp. salt (don't use salt if your trail mix is salted)
2 cup trail mix (or any mixture of nuts, seeds, dried fruit, chocolate
chips, etc. The mixture can be chopped by hand or in a food processor
until coarse, but not quite so large. Or not - your choice.)
2 Tbsp. oil (or melted butter)
Mix ingredients in a large bowl.
When ingredients are thoroughly mixed, spread on an 11x17" Silpat in a
jellyroll-type cookie sheet pan and bake until browned on the edges -
about 20 - 25 minutes. When done carefully ease the Silpat out of the pan
and onto a wire rack. Then peel/slide the Silpat out from under the
Granola bars and allow to cool. Once cool, cut into pieces, or just break
into chunks, which is much easier.
