Quilter's Dream Dinner

This is one of my family"s favorite dinners. It's fast and allows me plenty of time to work on my quilting projects and yet looks like I spent alot of time in the kitchen preparing a meal.
Every night I save the leftover vegetables from each meal. I collect them in a gallon size ziplock bag in the freezer. When the bag is full I pull it out and let it defrost on the counter while I brown one pound of ground beef. Peel and boil about six potatoes and then mash. Mix the meat with the soft vegetables and add a can of beef gravy. Pour into a 9"X12" casserole and spread the mashed potatoes on top. Bake for about 45 min or until bubbly in a 350* oven. Enjoy!

I used to do the same kind of thing, put all the bits and pieces of leftovers in the freezer - veggies in one ziplok, meat in another. Saute an onion, add the frozen stuff and some potatoes and cover with v-8 juice, cook an hour or so, heavenly homemade soup. My son loved it, he would come home from school and go "Mmmmmm, refrigerator soup"!
