Going to try this today. already made up. will cook it before i go to the party. I doubled this recipe to make 2 - 9x11 pans.
8 oz cream cheese
1/2 Cup Thousand Island Dressings
16 oz sauerkraut, rinsed and squeezed dry
8 oz shredded corned beef (lunch meat with work)
16 oz shredded swiss cheese (you have to buy a brick,didn't see any pre shredded)
1. Preheat oven 350F (175C)
2. Mix cream cheese and dressing
3. Spread kraut into 9 x 11" pan.
Layer corned beef, swiss cheese and the dressing mix
4. Bake 20/25 minutes
Because i went ahead and doubled it, i thought the swiss would be kind of strong for most people, so i add 16 ounces of mozzrella to the shredded swiss.
i bought some of the party size rye and pumpernickle breads and also rye triscuits.
this can be done in the crock pot according to some comments at
www.allrecipes.com

IMHO, i would add more thousand island dressing. maybe as much as 1/4 cup more.
i think it would be better with "shaved" corned beef..and done in crock pot, mixed up. lol
