Shoestring Potato Salad
1 c. grated carrots
1 c. finely chopped celery
2 tbsp. grated onion
1 (7 oz.) can tuna, flaked
1/2 c. salad dressing
1 c. (4 oz.) shoestring potatoes
Mix all ingredients except potatoes and chill thoroughly. Mix potatoes in at the last minute just before serving.

Isn't it funny how you talk about something and then soon after you see what you were talking about?
Took mom for some appointments earlier today and we stopped at WalMart so she could pick up a few things. Well, we were walking down the aisle between the food section and the kids clothing, and low and behold a HUGE display of 3 pound cans of Shoestring Potatoes LOL. Mom thought I had lost my mind I started giggling so hard my eyes watered. I don't think I could make that much Shoestring Potato Salad in a year, unless of course it was for a big ole quilting board quilting bee LOL

There used to be great cookie-like things made with shoestring potatoes, too - you melted butter and butterscotch chips, then used it to coat potato sticks and walnuts. I think they were called porcupines. They were sweet and salty, and never lasted long.
