Here is a recipe that my Mother-In-Law made for people with diabetes.I always made it & gave it out at Christmas.
Sara's Trail Mix -
1 Cup of each ingredient -
Dry roasted unsalted peanuts
Dry roasted salted peanuts
Unsalted sunflower seeds
Salted sunflower seeds
Golden raisins
Dark raisins
Carob Chips ( I use Nestle Morsels)
Butterscotch Morsels
Salted soybeans
Unsalted soybeans
You can always add different kind of nuts or anything that you like. You just want to balance out the salt & sweet.

I make the pretzel "thingies" using the square, waffle-shaped Rollos. I put a second pretzel on top of the Rollo and press it down enough to flatten the rollo a little. These are also hard to leave alone!

snack Mix
4 cups golden grahams
2 cups dry roasted peanuts
1 cup craisins
1 - 12 oz pkg white chocolate chips
1 1/2 Tbls oil (for melting)
Put golden grahams, peanuts & craisins in bowl
Melt choc chips & oil in microwave according to directions of
on chip pkg. Pour over mixture til all coated.
spread out on wax paper & let dry. Break up
and it is ready to eat! Addictive!!!
I have also made it & not put any coating on it-
just used it plain. good also
I made the small little tote bags & put a snack bag
of this mix in each one for our quilt group
last Christmas. It was a hit!

I make a snack using club crackers. You put a single layer of club crackers in a bar pan that has foil in it.
1 cup butter
3/4 cup sugar put in pan and heat to bubbly. Cook 1-2 minutes. Spoon over the club crackers. Put in oven and bake 350 degrees for 10 minutes or until bubbly. Take out and sprinkle semi sweet chocolate chips on top, I use 2 cups Leave for a few minutes and then spread melting chocolate chips over cracker layer Next sprinkle about half bag of toffee bits on top. Press lightly into chocolate. Let cool completely, if you can refrigerate for about an hour that helps set the chocolate. This time of year I put out on the enclosed porch (its cold out there) When set, break into pieces. I get requests for this at every retreat I attend. store in plastic bag.

2 cans corn
1 can black eye peas
1 can sweet peas
1 can black beans
Kraft Zesty Italian dressing (must be zesty)
Tortilla chips
Rinse all canned ingredients with water.
Mix all in container and coat with enough Zesty Italian dressing to coat and have a little on bottom of container.
Mix occasionally during the event to re-coat with dressing.
Scoop with tortilla chips and enjoy!!!
