A 27/127/28/128 on speed (motorized) is a loud machine. There's the motor noise, the sound of the shuttle moving, the "tack tack" sound of the thread check that moves the shuttle every revolution... I don't think they would have to add noise post production I have that exact machine here (1912 - decals are a little worse) as a HC and it came with the motor kit. I ran it with the motor and thought WOW! Louder than a 15 for sure. Maybe not as loud as a 15 with a darning foot though.
ETA: Which episode? I can download it and watch it and see if the noise is the same as the little lady here.

Remember in the beginning of the series how afraid the Dowager was of electric lights? And the new maid sweeping the vapors from the outlets before going to bed? Great series, but I don't like the new DA fabric line.

So, this is the first time I've watched this show, and coming in that late, I didn't have a clue what the show is really about. The architecture and furniture is gorgeous! Lots of Wholecloth ideas came out of watching one episode.
I'd say that the sound of the machine is pretty close to right. I usually think of it as a little higher in pitch, but otherwise, it's quite accurate.
